Red Beans and Rice Recipe


Red Beans and Rice Ingredients

* 2 cups Red Kidney Beans, cooked
* 1 tablespoon vegetable oil
* 1/4 cup celery, chopped
* 1/2 cup onion, chopped
* 2 garlic cloves, minced
* 1 teaspoon salt
* 1/4 teaspoon pepper
* 1/2 teaspoon Tobasco sauce
* 4 slices bacon
* 3 cups rice
* 1 green onion, chopped

Red Beans and Rice Directions

1. Place oil in large pot and heat.
2. Add chopped onion, celery and garlic. Saute until onion is tender but not browned.
3. Add beans, salt, pepper, bacon, Tobasco sauce and enough water to cover beans by 3 or 4 inches. Stir well. Cover and simmer until beans are tender, 1 1/2 to 2 hours. Watch that beans do not get dry. Add water as needed.
4. Cook rice according to package directions.
5. Serve beans over rice. Top with a sprinkling of chopped green onion.

Serves: 4 to 6 people
