Red Bean Caesar Salad Recipe
Ingredients
* 2 (15-ounce) cans Red Kidney Beans, drained* 1/2 cup olive oil
* 1/4 cup lemon juice
* 1/4 cup grated Parmesan cheese
* 1/2 teaspoon dill weed
* 1/2 teaspoon garlic salt
* 1/4 teaspoon black pepper
* 1 medium head romaine lettuce
* 1 cup seasoned croutons
* 2 tablespoons choppd fresh parsley
* 3 hard-cooked eggs, cut in wedges
* Salad Dressing, your favorite (optional, it's good without it)
Directions
1. In medium bowl, combine olive oil, lemon juice, parmesan cheese, garlic salt, dill weed and pepper. Mix well.2. Add beans and toss gently. Cover and refrigerate 30 minutes.
3. Line salad bowl with romaine lettuce leaves. Spread bean mix on top and sprinkle with croutons and parsley. Garnish with egg wedges.
Serve with your favorite salad dressing on the side if desired.
