Bean Casserole Recipe


Ingredients
* 4 cups cooked Dark Red Kidney Beans or 2 (19oz) cans
* 1 clove garlic, diced
* 1 cup red onion, diced
* 1 teaspoon cumin
* 1 cup fresh spinach, chopped
* 1 (16-ounce) jar picante sauce
* 8 cups cooked rice
* 2 medium tomatoes, sliced
* 1 cup Cheddar cheese, shredded
* 1/2 cup sour cream
Directions
* Cook rice first per package instructions
* If not using canned beans, cook dried beans until tender.

1. Preheat the oven to 350 degrees F.
2. Heat 1 tablespoon water in a nonstick skillet.
3. Add onion, cumin, and garlic and saute for 2 to 3 minutes. Add spinach and saute until wilted. Set aside
4. Combine beans and picante sauce and spread 2 cups of this mixture in the bottom of 9 x 13-inch baking pan coated with cooking spray.
5. Spread 4 cups of cooked rice over bean mixture. Arrange tomato slices on top of rice. Layer spinach mixture, remaining rice, and remaining 2 cups of bean mixture over tomato slices.
6. Cover and bake for 30 minutes.
7. Sprinkle with cheese and bake, uncovered, for another 10 minutes or until cheese melts.
8. Place 1 tablespoon sour cream on top of each serving.
