Southern Black Eyed Peas Recipe
Ingredients
* 1 to 2 cups dried black eyed peas (2 cups for 4 people)* 1/2 medium onion
* 2 slices bacon, uncooked
* 1 teaspoon garlic powder
* 1 teaspoon white vinegar
* 1/2 teaspoon sugar
* 1 teaspoon salt
* 1 teaspoon black pepper
* dash tabasco hot sauce (optional)
Directions
1. Combine all ingredients in a large pot and cover 2-4 inches with water.2. Bring to a boil and simmer until peas are tender (about 45 minutes)
Note: Watch closely that the peas do not get dry. They will burn quickly.
Note 2: Taste peas before removing from heat and add salt, pepper or garlic to your taste.
